Acetic acid is used as a milk stone descaling agent and disinfectant during cleaning-in-place (CIP) of dairy processing equipment. It is a weak acid that has antimicrobial and antibacterial properties and is effective in dissolving milk stone (calcium and magnesium phosphate). It is also used to sterilise and disinfect water and processing equipment in commercial, industrial, and municipal settings. It is effective under a range of temperatures, pH and hard water conditions, and ultimately degrades to water, oxygen, and carbon dioxide; it is therefore suitable for applications in food processing and is relatively safe for the environment.
